crusty success!


finally. finally! bread that the dane and i are both happy with. the crust is nice and hard without breaking teeth, while the inside is spongy and chewy. i've used no-knead recipes before with less than stellar results but this one is definitely a keeper. or maybe i've already tried baking this bread and just did everything completely wrong. anyway, this attempt is just about perfect!


the best part (aside from not having to knead) is that there are only four ingredients. and none of them are butter or oil, making it a somewhat healthier and cheaper loaf. i made it with regular white flour and grahamsmel; which i don't think is gram flour but actually fine whole wheat flour. though the texture and look are fantastic, maybe i could have added just a pinch more salt in the dough. next time!

what a coincidence - been trying to find a good no-knead recipe myself. tried one that came out sad, sad, sad.

I love homemade bread. We've been keeping the dough from Artisan Bread in 5 Minutes a Day in our fridge at all times and it's heaven!

gaga, i was looking at that wonderful bread site but worried how long the dough would keep in the fridge. how does it keep?

I know this sounds silly but can you give me the recipe in Danish? LOL

My Danish vocabulary unfortunately does not extend to ingredients of making a bread, therefore it'd be great if I know the ingredient name in Danish so I could just head to the supermarket and grab them from the aisle :)

hehehe. ok, in danish you will need gær (just a pinch of the fresh type), lunkent vand, hvedemel, salt, and i used durummel for dusting since cornmeal is kind of hard to find here... i also blended hvedemel with grahamsmel to bump up the fiber content.
