vegetarian pho

i tried making vegetarian pho the other day with soba noodles. this version of a southern california lunchtime favourite was tolerable, but nowhere near the intended taste. hot soup was nice on a cold, rainy day... but wished i had eaten something else. ):

oh well, i'll have the real thing in my hot little hands in just a few days! the dane and i will be in california for the holidays and i intend to take every opportunity to eat cheap asian food. :D
