carrot cake for two


after the i got you on tape concert, there was a catered outdoor lunch backstage. i chose a nice vegetarian lasagna with squash and salad. for dessert there was fresh fruit and carrot cake. i haven't eaten carrot cake in a long time so i gave the fudgy-looking morsel a try (sorry, no photo). the dane and i agreed that it would have been absolutely perfect if the frosting was not so tooth-achingly sweet and asked that i try it at home. i'm not a fan of sneaking vegetables into sweets but who am i to deny my hard-working fiance's request for this 'healthy' treat? (;


i tweaked the recipe to serve just the two of us, to our taste. the dane has a little problem of nibbling at goodies like chips and cakes until they're gone so what a relief for me to find a perfect portion! this is sweet enough for me to eat a fourth of one serving and be satisfied. it's not as wonderfully dense and fudgy as the backstage carrot cake, instead this is... well... cakey. but i'm sure i can perfect it after a few more tries. anyone want to help me taste test 'em all? :D

carrot cake for two
adapted from allrecipes

1 egg
65 ml vegetable oil
90 g white sugar
55 g all-purpose flour
a pinch of baking soda
a pinch of baking powder
a pinch of salt
a few shakes of ground cinnamon
75 g grated carrots
25 g chopped walnuts

15 g butter, softened
40 g light cream cheese, softened
20 g confectioners' sugar
a few drops vanilla extract

preheat oven to 175°C. oil two ramekins and sprinkle them with cocoa or cinnamon. in a bowl beat eggs, oil, and sugar. sift together the flour, baking soda, baking powder, salt, cinnamon, and add to the egg mixture. stir in carrots and walnuts just until combined and pour into the ramekins.

bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the cake comes out clean. let cool in ramekins for 10 minutes, then turn out onto a wire rack and cool completely.

to make the frosting just combine butter, cream cheese, confectioners' sugar and vanilla. beat until the mixture is smooth and creamy. frost the cake only when it's cooled or else you're making a world of trouble for yourself.


i garnished it with a single walnut because the dane goes gaga over them. to be honest i don't think it even needs the frosting and it looks fine without. maybe next time i'll leave them plain and swap out the white sugar for its brown brethren and pineapple. about 10 years ago i tried making a carrot cake and it pretty much tasted like vegetables in dry bread with a hint of baking soda. what a great feeling now that i can bake edible delights confidently. (:

that carrot cake looks delicious... i just had a chocolate muffin, but wish I had a carrot cake muffin instead :-)
