copycat



i finally caved in to the trends and tried my hand at quinoa. it's easily digestible, gluten-free, full of protein... why didn't i try it before? well, for one thing it is pretty expensive here in denmark. not sure why i even bought it last week since it wasn't on sale. but it was just what i needed for a quick summer picnic in 30°C weather. cooks quickly on the stove and makes a great, cold salad. these days i am just too lazy to cook with recipes (apart from bread and sweets) so i just jammed on this one.

mish-mash quinoa salad
serves 2

ingredients
1 dl uncooked quinoa
2 stalks celery, including leaves
half a red onion
2 tsbp sun-dried tomatoes
3 tbsp raisins
2 tsp vinegar
2 tbsp olive oil

after rinsing the quinoa well, cook with 2 dl water for 15 minutes. while you're waiting, finely chop the celery and onion. the quinoa is done when the little tails start appearing and detaching from the grains. fluff the stuff and add in all your goodies. add salt and pepper to taste, and a little lemon wouldn't hurt. serve outdoors, preferably barefoot.

fresh tomatoes would have been much better, but sadly i didn't have any on hand. the sun-dried ones added a nice saltiness though. there's always next time. as you may have read on a billion foodblogs before, this grain acts like a quick-cooking brown rice. nutty and filling, there are endless possibilities for salads, risottos, porridges... i can't wait to use it again! maybe even in my next veggie burgers. (:


on the regular side of things, a staple i've been keeping in the fridge nowadays is marinated mushrooms. they're great for a spur-of-the-moment picnic and don't require cooking. olive oil, vinegar, a bit of herbs, as much garlic as you like, no solid recipe here. great in salads, on bread... sometimes right out of the jar in the middle of the night... (;
