red hot pick-me-up


maybe it's the danish classes, maybe it's work. in any case i've been feeling pretty tired all week. on wednesday i found a gap in between work and school where i could eat a hurried lunch in the comfort of my own home. in a few minutes, a spicy stir fry was mixed up and i felt energized for the rest of the evening. the next morning i noticed colour had returned to my cheeks and i wasn't nodding off during lunch. was it the chili that gave me power? as soon as i got home that day, i hungrily made the forbidden food:


kimchi pizza

a handful of dough
a half-handful of chopped kimchi
2 cloves of garlic, minched
half a small onion, chopped
sesame oil
a pinch of sugar
whatever toppings (bacon is a friend of kimchi)

shape the dough into a ball and let it rest for 30 minutes. while you're waiting, toss the kimchi, onions, and garlic in a pan on medium-high heat. of course you can leave out the garlic and onions but i rike it. when the kimchi becomes translucent (about 7-10 minutes), turn off the heat and stir in the sugar with a drizzle of sesame oil. roll the dough out into a pizza shape of your choice and spread on the kimchi mush and toppings. bake at 200°C for 15 minutes and beware cheeseburns.

i used mozarella, mushrooms, and way too much kimchi. i even had the nerve to add extra chili and gochujang! by the time i finished the pizza, i was in tears and my mouth was pretty much numb for the rest of the day. it was awesome. but next time i'll probably add more cheese and less kimchi... unless i'm feeling adventurous.

by the way, i made that pizza on thursday and i'm still feeling like a million bucks/kroner. (8

Kimchi pizza is a great idea! I have recently been experimenting with kimchi as well. So far I have tried kimchi quesadillas, a kimchi quinoa salad and a kimchi quiche.
