kbbq salad dressing


if you've ever been to a korean bbq restaurant, there was probably a big communal bowl of torn romaine lettuce and maybe some spring onions. i've always loved the taste of that but i could never figure out what it was that made the dressing so good. finally i made something pretty close, but the flavour is cranked up so that it can be used on something as tasteless as iceberg. p.s. it's vegan! :D

kbbq salad dressing
adapted from myrecipes

¼ cup coarsely chopped onion (i used one small onion)
1 tbsp grated peeled fresh ginger
3 tbsp rice vinegar
1 tbsp water (more if you want the dressing thinner)
1 tbsp sesame oil
1 tbsp soy sauce
1½ tsp sugar
1 tsp fresh lemon juice
1 tsp miso
pinch of salt
a few cranks of black pepper

whirl away with your standing or immersion blender and dump it on top of your salad to make the magic happen.
