kongnamul guk (soybean sprout soup)


i'm not fooling anyone who can read a weather report; summer is not in denmark. wherever it is, i hope it's having fun. today and yesterday have been very rainy and windy. fortunately, that's great weather for kongnamul guk a.k.a. soybean sprout soup. i used maangchi's recipe but made it spicy and vegetarian by adding the gochugaru but using a kelp leaf instead of anchovies. after removing the kelp, i sliced it thinly and put it back in the soup. served with brown rice, this vegan version of the soup was a healthy and filling dinner that i'm happy to say three other people enjoyed (though i might have made it a little too spicy). (:


i might not have attempted the soup if i wasn't able to find bean sprouts at a cheaper price. for our flat's new years eve party i made bibimbap and the sprouts and spinach i bought from superbrugsen were so expensive! but the chinese green grocer near the central station was selling a kilo of soybean sprouts for 18kr. not exactly southern california price, but close! i still have half the bag left so i'm wondering what else i can make. soybean sprouts side dish with soya and sesame oil, mixed in in kimchi pancake, in bibimbap... actually there's a dish that just has sprouts on rice but that seems a bit boring.

any suggestions?
