bakewell tart

The June Daring Bakers' challenge was hosted by Jasmine of Confessions of a Cardamom Addict and Annemarie of Ambrosia and Nectar. They chose a Traditional (UK) Bakewell Tart... er... pudding that was inspired by a rich baking history dating back to the 1800's in England.



this month's daring bakers challenge was a dessert i've never had before. the only almonds that i've had in my tarts or pies have either been flaked or in marzipan form. that said, i liked the texture of the frangipane! i couldn't find almond meal here in denmark so i got some whole almonds and gave em a whirl in the coffee grinder.



the optional element in this challenge was the filling. i chose a package of sweetened azuki bean paste that my mom thoughtfully sent with me on one of my visits. i thought this went pretty well with the almondy flavour.


however, i can't say i was a fan of the crust. it was a little too savoury and dry for me. maybe if it had come out better, i would have been happy with this dessert. yes, it's true. there are sweets out there that i don't go all googly-eyed over. although it looked very nice and the dane ate nearly half of this tart, i don't think i'll bake it again.



no regrets! with each challenge i learn more and more about baking and the process is becoming easier and i don't sweat bullets when it comes time to touch some dough. (;
