ain't easy bein' vegan


though it felt like i ate a lot, i felt hungry most of the day! it started in the morning when i tried to make kale chips for the first time. pretty brave considering i've never eaten kale in any state before. i ended up eating a whole bundle of it, so you can guess it was successful. the oven was still hot so i roasted some grape tomatoes. after i ate half of those i was still quite hungry so i pan-fried some firm tofu. i'm still crushing on tofu... how am i going to live without the 88 cents stuff in denmark again?! two hours passed and i became the very hungry caterpillar so i cooked some oyster mushrooms in wine and garlic (sigh, is there anything better?). while waiting i ate a small apple and a dried persimmon. at this point my stomach was somewhat satisfied so i stopped eating...


...until my mom came home and opened a bag of these. i've loved them ever since i was little, pretending they were worms and slurping them up like noodles. the kind my mom bought this time was in a bag with liquid... weird, i usually just see them dried or already prepared. anyway, what she does is rinse them a couple times and then "cook the heck outta them with garlic," according to her. i don't think she cooked them that long... maybe 5 minutes. then she adds soy sauce to taste and garnishes with spring onions and sesame seeds. so good!

after eating a bowlful of those bracken fiddleheads, i was not that hungry. but right before i went to bed my stomach got all grumbly again. so, that's how i accidentally ate vegan for a day and i gotta say... it's pretty hard. are vegans always hungry? ><

I need to try to make kale too, but I just don't know where to start never having done it myself before. I think I'm scared since the leaves can kind of look like rhubarb leaves - and those things are poisonous. I know its not the same, but my mind just can't process it.

everyone should try these fern braken at least once. they're very healthy and a funny texture. :D
